Latin Name: Thymus vulgaris. Days to Maturity: 90. About the Plant: Perennial. A modern selection of English/German/Winter Thyme that is highly aromatic and productive compared with common thyme. Thyme is important in many culinary traditions both fresh and dried. It is a frequent component of za’atar, Italian seasoning blends, herbs de Provence, and bouquet garni. Varico 2 Thyme has medicinal uses as well, with high thymol content which is a compound noted for its antiseptic qualities. Sprawling evergreen plants grow to about 12″ tall and are well-suited for growing in the herb garden, containers, rock gardens or even as ground covers. Pretty white flowers are attractive to beneficial insects. Native to the Mediterranean region, it is both drought tolerant and extremely cold-hardy. “Varico” means vein. Originally listed as a hybrid but we have saved seed for several generations and it appears uniform.
